Irish Breakfast
3-4 Medium Potatoes
6 Eggs
½ Cup Milk
½ Lb Bacon, cooked and
crumbled
Butter
½ Onion
Salt and Pepper to taste
Sautee onion in butter. Peel
And cube potatoes. Salt and
Pepper to taste. Add to
Onion, cook until browned
And soft. Scramble eggs and
With milk. Add to potatoes,
Stirring often. Add bacon.
Remove from heat when eggsAre done.

Pumpkin Cobbler
Pumpkin Cobbler
Crust:
1 Box Yellow Cake mix (reserve 1 Cup for topping)
½ Cup Butter or margarine
1 Egg
Filling:
1 (30 oz) Can Pumpkin
3 Eggs
2/3 Cup Canned Milk
1 Tsp Vanilla Extract
1 Tsp Cinnamon
1 Tsp Ginger
½ Tsp Cloves
1 Cup Brown Sugar
Topping:1 Cup Reserved Cake mix
½ Cup Granulated Sugar
¼ Cup Butter or Margarine
Mix with spoon cake mix, butter, and one egg. Press into an ungreased 9x13” pan. Mix pumpkin, 3 eggs, spices, brown sugar together; pour over dough. Mix together topping ingredients until crumbly. Sprinkle over pumpkin layer. Bake at 350 degrees 45 to 50 minutes. Serve with whipped cream and caramel topping.
**** Ok...I know this one is a little more complicated, but not TOO much, and I also know this is one of Mark's favorite desserts...or breakfasts...whatever :o)

1 T Cinnamon
3 T Sugar
1Stick Butter
1 Cup Brown Sugar
roll biscuits in mixture. Put in bundt
cake pan. Melt margarine brown
sugar. Pour over biscuits. bake at
350 for 25-30 min.

Hershey Bar Pie

1 8-oz Tub Cool Whip
6 Hershey’s w/Almonds Bars
2 Tsp Water
1 Graham Cracker Pie Crust
Break Hershey bars into thirds,
place in microwave-safe bowl.
Add water. Microwave on low for
approximately two minutes, stirring
twice, or until chocolate is melted.
Fold in Cool Whip. Place mixture in
graham cracker crust. Freeze 4-6
hours, or overnight. Thaw app. 10
minutes before serving. Garnish
as desired.

3 glugs cooking oil
2 tablespoons sugar
1 egg
1 cup milk (or a little more to desired consistency)
Mix ingredients together. The batter will be lumpy. Heat the skillet or griddle until a drop of water sizzles on it. Pour batter on griddle. Wait for the bubbles in the batter pop but do not fill in, then flip. Pancake is done when brown on the flip side
